11 Short and Easy Enoki Mushroom Recipes to Level Up Your Cooking Game!

Feeling bored at home? Considering making your own food but you don’t know where to start? Then try using Enoki Mushrooms to add some healthy flavor to your food! The best thing about enoki mushrooms is that they are really easy to prepare. If you would like, you can even eat them raw alongside other ingredients inside a salad-type dish. You need to be careful, however, because Enoki mushrooms can go bad. 

You can check if there are any discolorations or slime in the body of the mushroom to make sure that it hasn’t gone bad yet. If there are, then pluck the discolored or slimy parts of the mushroom and rinse them with running water. After that you can use a knife and cut the lower, brown-colored parts of the mushroom. And You’re all set! In this blog, we have some of the simplest, yet absolutely delicious Enoki Mushroom recipe variations you can try! 

1. Simple Stir Fry Enoki Mushroom Recipe

Okay, so let’s start by stir frying our enoki mushrooms. If you don’t like things raw, then this might be one of the preferable options for you. Here is a list of ingredients that you would need: 

  • Fresh ginger (grated)
  • Garlic (2 cloves)
  • Sesame oil (1 tbsp)
  • Soy sauce (1 tbsp)
  • Enoki Mushrooms (8 ounces, already cleaned and cut)

Now that we have finished assembling the ingredients that we will need, it’s time to cook! You will just need a skillet and a spatula or anything that can help you stir. The steps are pretty simple to follow along, here they are:

Step 1: Heat up oil on the skillet.

Step 2: Add garlic and cook for one minute or until you can smell the fragrance.

Step 3: Add the enoki mushrooms and cook them for 2 minutes or until they’re wilting. 

Step 4: Add soy sauce and the grated ginger for extra flavor.

2.  Enoki Mushroom recipe: Nametake 

You can make your Enoki Mushrooms into a delicious Japanese Nametake, a sauce consisting of enoki mushrooms that are cooked until they become soft. This dish is quite nice for someone who is currently dieting or trying to eat healthier. Here are the necessary ingredients for you to make your own Japanese Nametake

  • 15 mL of Rice Vinegar 
  • 4 mL of sugar 
  • 30 mL of Mirin
  • 30 mL of Japanese Sake
  • and last but not least 7 ounces of Enoki Mushrooms (cut and cleaned)

For the tools, you only need a pot and a spatula or ladle to stir! Oh, and also you will need a clean container to store the nametake. So now that we have the tools ready, let’s make some Nametake!

Step 1: Place all ingredients inside the pot, except for vinegar.

Step 2: Cook with medium heat while frequently stirring the ingredients inside the pot.

Step 3: When you feel the broth or the mixture becoming more thicker, put in the vinegar and continue cooking for about 2-3 minutes. 

Step 4:  remove the pot from the heat when you’re done, let it cool down, contain and refrigerate for one or two weeks. 

And there you go! The salty goodness of Nametake has been added to your food/ingredients list! Way to go! You can eat Nametake or use it to make some other Japanese dish like kinoko gohan (lit: mushroom rice).  

3. Kinoko Gohan

Here is a dish that only requires you to use your rice cooker! Heat it and leave it, just like that! The dish literally means ‘Mushroom rice’, because it uses an assortment of mushrooms! Here are the ingredients you need to make one: 

  • White/brown Rice 
  • Mix of mushrooms including Enoki, Shiitake and oyster mushrooms
  • Mirin
  • Japanese Kombu
  • Sake
  • Soy Sauce 
  • Green onions

How to make: 

Step 1: Prepare your usual rice with water inside the rice cooker. 

Step 2: Add a sheet of kombu on top of the submerged rice and wait around 10-15 minutes for it to bloom. While waiting, you can also start cutting the assortment of mushrooms alongside green onions for your final touches later.

Step 3: Now this is the exciting part! you put all those thickly cut mushrooms inside the rice cooker. Now your rice cooker should look like it’s going to be overflowing with mushrooms. But don’t worry, the thick mushrooms should shrink in size once you’re done!

Step 4: Start Cooking your rice and wait for the magic to happen. Once you’re done cooking, you have the option to add butter for more flavor. 

With that, you’re ready to serve a delicious kinoko gohan! Don’t forget to put your sliced green onions alongside other condiments that you feel might elevate the dish!

4. Enoki Mushroom Pancake Recipe

Let’s get a bit novel, shall we? This is certainly one of the more unique takes on using Enoki Mushrooms. Here are the list of ingredients you need: 

  • 200 grams of Enoki Mushrooms (cut and cleaned)
  • 1 Carrot (finely chopped) 
  • Yellow onion (½, finely sliced) 
  • Green onions 
  • 15 mL of sesame oil
  • Salt and pepper according to your preferences 

Since it is pancakes after all, you’ll need to make a batter as well. To make the batter, you will need tapioca starch (45 ml), flour (30 ml), water (25 ml), and garlic powder (8 ml),  

You should also make a dipping sauce to make it more delicious. You can make it with soy sauce (30 ml), vinegar (15 ml), and 8 ml Korean Chilli Flakes. 

For the utensils you just need a set of bowls one large and one small. You will also need a pan and tongs.

Now that you are ready to make every part of the Enoki mushroom pancakes, let’s get cooking! 

Step 1: repared. Add sesame oil, salt, and pepper to the mix. 

Step 2: mix all of the ingredients for the batter in a small bowl.

Step 3: pour the batter that you made into the large bowl and mix it. 

Step 4: Pour oil into the pan and make small enoki doughs with your hands.

Step 5: Place those doughs into the pan one by one, flip it with tongs if one side is already cooked.

Step 6: once all of the doughs are cooked. Lift it up to be prepared for serving. Best eaten when it’s hot and crispy with dipping sauce to make it more tasty.

5. Steamed Enoki Mushrooms Recipe

Here is another one that is pretty out of the box as well! We have steamed mushrooms! Here are the ingredients you need to have before making one: 

  • 150 grams of enoki mushrooms (cut and cleaned) 
  •  5 grams or one teaspoon of sesame oil 
  •  Green onion and chili (just one each for garnishing)
  •  Garlic Cloves (minced) 
  •  15 mL of cooking oil
  •  1 teaspoon of sugar 
  •  15 mL of light soy sauce 
  • Add salt based on preference 

The tools for this one include a frying pan, steamer and a spatula to mix and stir.

Step 1: put oil in the frying pan and mince the garlic.

Step 2: place garlic in the frying pan and cook it without burning it.

Step 3: lower heat to zero and add sugar, salt, and soy sauce. Mix it and transfer to a serving plate. That will be your awesome garlic sauce.

Step 4: Simply steam the mushroom for 6 minutes. Put it out and serve it with the sauce and add some garnishes such as green onions and chili

And there it is! Another side dish made from Enoki Mushrooms! 

6. Enoki Mushroom Scrambled Eggs 

Here is a dish that can easily spice up your morning! Enoki Mushroom Scrambled eggs! These are the ingredients: 

  •  4 eggs 
  •  Soy sauce
  • 100 gram of enoki mushrooms (cut and cleaned) 
  •  Sesame oil
  •  Salt and pepper
  •  Green onions for garnishing 

This time you will just need a pan and a spatula or anything else that can help you mix and stir!

Step 1: Crack the eggs and put them into a bowl alongside 1 tsp of soy sauce.

Step 2:  Whisk the egg mixture well.

Step 3: Cut enoki mushrooms into a smaller size.

Step 4: heat up the pan and pour sesame oil.

Step 5: pour the egg mixture and the enoki mushrooms into the pan. Keep the heat while stirring. Wait until the enoki mushroom wilts.

Step 6: remove from heat and pour the Enoki mushroom scrambled eggs mixture into a plate.

And there you have it! Enoki mushroom scrambled eggs!

7. Beef Wrap With Enoki Mushroom

Want a little meat alongside your enoki mushroom?? Then this enoki mushroom recipe is just for you! Here are the ingredients: 

  • Beef (200 grams) 
  • Onion (thinly sliced) 
  • 100 grams of enoki mushrooms (cut and cleaned) 
  • 100 grams of Choy Sum (optional)
  • Salt
  • Sugar
  • Teriyaki Sauce

The tools you need only consists of a frying pan and a spatula to mix and stir

Step 1: cut beef and onions into thin strips/slices.

Step 2: heat up oil in the frying pan and stir fry your onions and enoki mushrooms.

Step 3: set aside your stir fried onions and enoki mushrooms and put your sliced beef there. If it’s not flat enough you need to find something like the back of a knife to flatten it.

Step 4: Put the stir fried onions and enoki mushrooms on top of the beef slices before it’s cooked and roll them up nicely. 

Step 5: Wait for the beef slices to get cooked and remove them from the frying pan

Step 6: blanch choy sum with boiling water. 

Step 7: put the choy sum into the plate, stack it with beef rolls. Add teriyaki sauce for flavor.

This food would be the perfect way to solve that sudden crave for food during day or night. It’s easy to make too because you can use leftover beef for this recipe!

8. Miso Soup with Enoki Mushroom

Miso is always good to start or end the meal. Here is one recipe using enoki mushroom that can give miso more flavor!

  • 300 grams of tofu (soft and cut into small cubes)
  • 100 grams of Enoki Mushroom (cut and cleaned) 
  • 5 cups of water
  • 3 tbsp of hondashi/instant dashi powder
  • 4 tbsp of soybean paste/miso
  • Green onions for garnishing 

The tools you need to make this enoki mushroom miso are a cooker and a spatula or something that can mix and stir well.

Step 1: Simply boil water and add the instant dashi.

Step 2: lower the heat and add the soybean paste/miso.

Step 3: put in enoki mushrooms and tofu.

Step 4: Cook for a few minutes or so and it’s ready to be served!

9. Enoki Salad

Here is another enoki mushroom recipe that we can make with enoki mushroom! 

  • 300 grams of enoki mushroom (cut and cleaned).
  •  1 Cucumber (sliced into strips).
  •  15 ml of light soy sauce.
  •  ½ a teaspoon of sesame oil.
  •  1 minced garlic clove.
  •  Salt (small amount).
  •  1 tsp of sugar

For this recipe the tools you will need are a cooker, a colander, a large bowl, and a small bowl.

Step 1: Boil water inside a cooker and put in your enoki mushrooms. Wait until it wilts.

Step 2: pour the boiled mushroom into a bowl and also the rest of the vegetables. 

Step 3: Make the sauce by mixing light soy sauce, sesame oil, salt, and sugar into a small bowl.

Step 4: Pour the sauce over the mushroom and the rest of the vegetables. It is ready to be served. 

And that is how you make a simple yet appetizing enoki mushroom salad!

10. Spicy Enoki Mushrooms

If you would like to try something a bit hot and out of the ordinary, you could try making a spicy enoki mushroom! 

Here are the ingredients: 

  • 7 ounces of enoki Mushrooms 
  • 9 cloves of garlic 
  • 5 tbsp of oyster sauce
  • 5 cloves of shallots 
  • ½ tsp of black pepper (powder) 
  • 3 sheets of orange leaf
  • 1 sheet of Indonesian bay leaf 

For the tools, this time it would be preferable if you have a large wok lying around somewhere, alongside something to stir the ingredients with. You can also add things like sausages and seafood to make it more meaty or some nice bird’s ice chili to turn up the heat! Lastly, don’t forget to also prepare oil, salt, water accordingly as well.

Now that we are all set, let’s start cooking! Please don’t forget to cut and clean your enoki mushrooms before cooking. 

Step 1: pour oil in the wok and let it heat up. 

Step 2: finely cut your garlics, shallots, orange leaves and Indonesian bay leaves. 

Step 3: stir fry the ingredients that you have finely cut.

Step 4: Add sufficient amounts of water and add salt alongside the rest of the spices safe for the enoki mushrooms and the meat (so either sausages or seafood). Cook until it’s boiling.

 Step 5: Add Enoki Mushrooms and your preferred type of meat.

And you’re done! Be reminded that this one is not for the faint of heart or those who can’t really eat spicy food.

11. Mushroom-themed Ramen (4 servings)

If you want something more on the ‘big eat’ side you can also try making ramen with enoki mushroom! This ramen incorporates enoki mushrooms alongside other mushrooms to boost its flavor. Here are the ingredients that you need: 

  •  Water (7 cups) 
  •  Chicken meat (8 slices) 
  •  Dried shiitake mushrooms (1 ounce)
  •  Soy sauce (1 tbsp) 
  •  Eggs (4 pcs) 
  •  Small bok choy (two, vertically sliced)
  •  Chinese egg noodles (8 ounces) 
  •  Enoki mushrooms (cleaned and cut, 100 gram)
  •  Sliced green onions (¼ cup) 

Alright, you’re set! And now here is how you cook it: 

Step 1: Place your 5 cups of water, alongside chicken, and shiitake mushrooms inside a saucepan. Boil it while also closing the saucepan with a lid.

Step 2: Remove the saucepan from heat and leave it with a lid for 15 minutes. 

Step 3:  After 15 minutes has passed, strain the broth into a bowl, pour it inside the saucepan and set aside chicken and shiitake mushrooms. set aside the saucepan with a lid and pour the other 2 cups of water inside a dutch oven and let it simmer. 

Step 4: At the same time, place your eggs in a vegetable steamer and steam them for 6 minutes inside the dutch oven filled with water. Close the lid.

Step 5: Add your bok choy into the steamer and leave it for 2 minutes.

Step 6: Remove the steamer from the pan alongside the bok choy and the eggs. Set the bok choy aside and place the eggs in ice water for one minute. peel and cut the eggs in half. 

Step 7: You are ready to serve your ramen! Make sure to divide the noodles evenly between servings. Top the ramen bowl with bok choy, enoki mushrooms, bamboo shoots and green onions. Also serve two egg halves for each bowl.

12. Udon with Enoki

Here is another enoki mushroom recipe for you that will satisfy your appetite! Udon with enoki mushrooms! Here are the ingredients: 

  • 400 grams of Udon noodles
  • 4 ounces of enoki mushrooms (cut and cleaned) 
  • 170 grams of Trimmed green beans
  • 170 grams of Carrots (washed, finely sliced) 
  • 10 grams of garlic (washed, minced)
  • 30 grams of ginger (washed, peeled and minced)
  • 2 green onions 
  • 15 mL of sesame oil 
  • 22 mL of soy sauce 
  • 45 mL of Hoisin Sauce 
  • Concentrated vegetable broth  

The tools that you will need are one non-stick pan, one pot or cooker, a bowl, and something to stir with.

How to make it: 

Step 1: boil salted water and mix it with soy sauce, hoisin sauce, vegetable broth and ⅓ cup of water to make your sauce

Step 2: heat up a non-stick pan with medium-high heat then add sesame oil, green beans, and carrots. Stir and cook for 6-7 minutes

Step 3: after 6-7 minutes has passed, add garlic, ginger, and green onion. While doing this, start boiling the noodles using a pot under medium heat. Do this for 1-2 minutes

Step 4: Drain the noodles and add them to the non-stick pan alongside the sauce and enoki mushrooms

Step 5: stir the pan until the mushroom wilts. Place it unto a plate and it is ready to be served! 

For this recipe, you can also add chicken meat to improve the taste. I would recommend cooking the chicken meat separately by stir frying it and adding the sauces for 10-15 minutes!
